Simple Classic Coleslaw Recipe

This quintessential side dish for summer is very easy to make and a great cost-effective option for your next BBQ. This recipe can be multiplied to cater for any size gathering.

Ingredients:

  • 1 large carrot
  • 1/2 medium onion
  • 1/4 green cabbage head
  • 1/2 cup mayonnaise or aioli

Method:

  1. Wash all your vegetables to remove any dirt and grit.
  2. Thinly shred the green cabbage with the grain of the leaves. this will give you nice long thin strips. This can be done using a mandolin, a food processor, or a sharp knife.
  3. Thinly slice the onion using the same method as the cabbage.
  4. Grate the carrot. It does not have to be peeled beforehand just a quick wash is all that’s needed.
  5. Mix everything in a large bowl with the dressing and season with salt and pepper to taste.

To serve:

Coleslaw makes a great side dish for many meals but with the simple addition of cooked and shredded chicken, it can stand on its own as a light and delicious main meal. You can also add other ingredients to bulk it up or add more color, such as red cabbage, grated cheese, shredded parsley, thinly sliced radish and many more.
