Deliciously Decadent Chocolate Pudding Recipe
This rich decadent pudding will have your family and guests asking for more. Great on a cold night to warm the heart and soul. The Lindt chocolate can be replaced with your favorite chocolate or even berries if you like.
Ingredients:
- Melted butter, to grease pudding dishes
- 200g dark chocolate, coarsely chopped
- 200g butter, chopped
- 4 eggs
- 1 egg yolk
- 70g (1/3 cup) caster sugar
- 2 tbsp plain flour
- 2 tbsp cocoa powder
- 16 Lindt Lindor Dark or Milk Chocolate Balls
- Cocoa powder or powdered sugar, to dust
- 1 cup whipped cream with a dash of vanilla extract, to serve
Method:
- Preheat oven to 180°C. Brush eight 185ml (3/4-cup) capacity ovenproof ramekins or pudding molds with melted butter and line the bases with non-stick baking paper.
- Place the chocolate and butter in a medium saucepan over low heat. Cook, stirring constantly, for 5 minutes or until the chocolate melts and the mixture is smooth. Allow to cool at room temperature.
- Use an electric mixer to beat the eggs, egg yolk, and sugar in a bowl until thick and pale.
- Transfer the egg mixture to a large bowl. Gradually fold in the cooled chocolate mixture.
- Sift flour and cocoa powder into the wet mix. Fold gently until smooth, trying not to knock too much air out of the mixture.
- Spoon two-thirds of the chocolate mixture into prepared dishes. Place on a baking tray. Divide Lindt balls among the centers. Spoon the remaining chocolate mixture over the top. Smooth out the tops to prevent the high points from burning.
- Bake for 15-20 minutes or until just set. Set aside for 10 minutes to cool slightly.
- While the puddings are cooling add a cup of cream and a 1/2 teaspoon of vanilla extract to a mixing bowl. Whip the cream to your desired consistency ready for serving. You can use some powdered sugar to sweeten the mix if needed.
To serve:
Carefully turn the puddings onto serving plates, use a thin knife to cut around the edges if needed. Dust with extra cocoa powder. Serve with cream. These can also be served in the ramekins to save dishes, just be careful of the hot sides. A mixed berry coulis, thin fruit slices, and mint tips can be used as extra garnish to brighten the plates.
