Simple and Fresh Garden Salad
This salad or variations of it appear on almost every restaurant menu as a side. It is a fresh and simple option that goes well with almost any meal. This salad can be scaled to suit your needs and the ingredients are more guidelines than rules and it can be changed in any way to suit your needs and tastes.

Ingredients:
- 1 head of lettuce
- 1 red onion
- 1 cucumber
- 1 capsicum
- 1 large carrot
- 3 medium to large tomatoes
- Salt & pepper
Method:
- Thinly slice your favorite lettuce, the red onion, the capsicum and cucumber into a large bowl
- Grate the carrot into the bowl.
- Cut the tomatoes in half and then into thin wedges. Cut each wedge in half and put them in the bowl.
Construction:
- Carefully mix everything together in the bowl.
- Season with salt and pepper to taste.
- Dress with your favorite dressing and enjoy
You can add almost anything you want to this salad. We like to add feta cheese and crispy noodles to it but there are so many options to make this your own. These include croutons, cashew nuts, parmesan cheese, cheddar cheese, toasted pine nuts, sunflower seeds, sesame seeds, pumpkin seeds, spring onion, thinly sliced cabbage and radish.
