Simple & Delicious Potato Salad Recipe
This simple recipe is a favorite at BBQ’s and as a side salad at dinner time. All the ingredients are optional and you can add anything you like to make this your own, bacon or ham makes a great addition. You can also increase this versatile dish to cater for more people if needed.

Ingredients:
Serves 4
- 5 medium Potatoes
- 1/2 Red onion
- 1 sprig of Spring onion
- Tablespoon finely chopped Chives
- 1/2 Red Capsicum
- 1/2 cup Aioli
- 1/2 cup grated cheese
- salt and pepper
Method:
- Wash, peel and cut the potatoes into 2cm cubes.
- Place them into a pot and cover with cold water and add a teaspoon of salt. Bring them to the boil and cook until tender (15 to 20 minutes).
- Once cooked drain the potatoes and let them cool completely in the pot they were cooked in.
- While waiting for the potatoes to cool prepare your vegetables and other ingredients to your liking. I like to roughly dice everything to help it mix into the salad better.
- Once the potatoes are cool mix the onions, capsicum, chives, cheese and aioli together in the pot and season with salt and pepper to your liking.
- Move the mix to a clean bowl and enjoy.
To serve:
This salad goes great with almost any meat. I especially like to have it beside BBQ Pork Spare Ribs or Char-grilled Rib Eye. Making a larger batch is great for taking to a BBQ and sharing with friends.
