
Gluten Free Chocolate Chip Cookie Recipe – Easy Soft Cookies
We love chocolate and baking in our house. This simple chocolate chip cookie recipe is cheap, easy and doesn’t require any over the top ingredients.

Ingredients:

- 75g table spread (margarine)
- 1 tsp vanilla essence
- 1/2 cup soft brown sugar
- 1 1/2 cups gluten free flour
- 1 eggs
- chocolate chips
- chopped nuts (optional)
Method:
- Preheat your oven to 180*C and line the bottom of a flat baking tray with baking paper.
- In a medium size pot place the margarine, vanilla essence and sugar and cook on a very low heat until the margarine is completely melted and remove from the heat.
- Once the margarine mixture has cooled slightly add the remaining ingredients and mix until combined.
- Portion the cookies out with a dessert spoon and roll into balls, lay 12 out on your tray at a time
- bake in the oven for 10min. This time may vary depending on your oven, they should be just slightly brown on top..
- Allow to cool on the tray before moving onto a wire rack. They will be very soft at first but will firm up as they cool.
